The great thing about the keto no-bake cookies is that they don’t use any egg like a traditional recipe. That makes them a great dessert option for those with egg allergies or intolerance.

As a child, I remember a neighbor always making haystack cookies and it was always such a treat. Sometimes she made them with oatmeal and other times she made them with crunchy chow mein noodles.

With this low-carb haystack no-bake cookie recipe, I used unsweetened desiccated coconut to give it that familiar no-bake cookie crunchy texture.

Sweet, crunchy, and portable, these keto no-bake cookies are the perfect low-carb treat. A quick and easy low-carb cookie recipe that is sure to be spouse and kid-approved.

Ingredients

  • 2/3 cup all natural peanut butter – or your choice of nut butter

  • 2 tablespoons real butter

  • 1 cup unsweetened all natural shredded coconut

  • 4 drops of vanilla stevia – or sweetener of your choice

  • 1 tablespoon cocoa powder – optional


Directions

  • In a microwave safe dish, melt butter.
  • Stir in peanut butter until smooth. If you chose to make these with cocoa powder, add them now.
  • Add stevia and coconut. Mix well.
  • Scoop 2″ spoonfuls onto a sheet pan.
  • Freeze for 5-10 minutes.
  • Store in a sealed bag, refrigerated. If you do not store refrigerated they will be sticky.
  • Enjoy!

Notes

  • If using a granulated sweetener add it to the butter when microwaving to melt.

Would I be able to use oatmeal instead of coconut? Also, would it be regular or quick oats?

With oats, they would not be keto friendly.

I added raisins, cranberry raisins and crushed walnuts.. and doubled the recipe into epicure pan.. It is delicious!

Hi. Very tasty. I used a tablespoon to measure size. Makes 12. Still very sticky. Next time I’ll add 1/2 cup more coconut. ?

Very good and filling! I used cookie scoop and got 10 – 1 ounce cookies. I always like to recalculate nutrition information and it closely matched recipe.
