If you are new to low-carb baking, bread made with almond flour is the easiest low-carb flour, to begin with. Almond flour bread makes for a sturdy, yet light loaf. Read on for top tips when baking with almond flour.

Almond flour is pretty easy and simple to bake with. especially for beginners. There are a few things however, you need to understand because you cannot directly substitute almond flour for wheat flour in regular baking recipes.

Almond flour doesn’t behave like wheat flour (that you may be accustomed to), because there is no gluten to make the bread stretchy or soft. So to make almond flour behave like regular wheat flour, eggs are used for structure, protein, and air.

I also use psyllium which absorbs water many times its own volume. It also helps give structure and volume to a low-carb bread recipe and adds plenty of fibre.

If you love bread but not the carbs, these fabulous keto and gluten-free bread rolls are for you! Made with almond flour and eggs, these are the best low-carb and grain-free bread substitute.

Ingredients

  • cooking spray

  • 1 1/2 cups blanched almond flour

  • 5 tablespoons psyllium husk

  • 1 teaspoon sea salt

  • 1 cup boiling water

  • 3 egg whites

  • 2 teaspoons white vinegar

  • 2 tablespoons sesame seeds


Directions

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Grease a baking sheet with cooking spray.
  • Combine almond flour, psyllium husk, and salt in a bowl; mix well.
  • Add water, egg whites, and vinegar; whisk with an electric mixer until well combined and a thick dough is formed, about 1 minute.
  • Wet your hands and shape dough into 8 rolls.
  • Arrange rolls on the prepared baking sheet. Sprinkle sesame seeds on top.
  • Bake in the preheated oven until golden, about 55 minutes.
  • Enjoy!

Hello, the nutritional facts don’t have the fiber content. How do we calculate net carb without it?

Tried these for the first time today. I made 6 rolls instead of 8 so it took slightly longer to bake. The flavor and texture were really good. The only sub I had to make was the vinegar. I didn’t have white vinegar so used apple cider vinegar. The rolls turned out purple!! 🙂 🙂

I really want to try this but don’t have the psyillium husk. I hate to keep buying this special items (so expensive) and then never use them again since I have been disappointed in so many keto recipes. Is there something else I can substitute for it? Thanks so much!

If you are ‘going keto’, you will use psyllium husks over and over!
