Pancakes are a highly requested breakfast item in the mornings. Keto Fluffy Buttermilk Pancakes are thick and full of pancake flavor without the eggy flavor of most keto pancake recipes. Top them with whipped cream or sugar-free syrup for an extra treat in the mornings.

Ingredients

  • 1/2 cup oat fiber

  • 1/2 cup almond flour

  • 4 low carb sugar substitute packet(s)

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 Tablespoon oil coconut, vegetable, grapeseed

  • 1 cup buttermilk

  • 4 eggs


Directions

  • Mix dry ingredients together.
  • Whisk in oil, buttermilk and eggs until well combined.
  • Drop batter by tablespoon onto heated griddle.
  • Cook until each side is browned. Serve warm with butter.
  • Enjoy!

Notes

  • Lower carbs by making a buttermilk substitute out of almond milk and vinegar.
  • For thicker pancakes, add 1-2 tablespoons additional oat fiber.
  • Makes about 15 pancakes (5 servings)

I have tried many gluten free and low carb pancakes and these are the closest to a traditional buttermilk pancake.
