These Low Carb Pumpkin Pancakes made with almond flour is the best breakfast you can have during this time of year.

Ingredients

  • 1 cup almond flour

  • 1/4 teaspoon ground allspice

  • 1/2 teaspoon ground ginger

  • 2 teaspoons cinnamon

  • 1/2 cup pumpkin puree

  • 1 teaspoon baking powder

  • 2 teaspoon liquid stevia

  • 2 Tablespoons oil

  • 3 eggs

  • pinch salt

  • butter for topping


Directions

  • In a medium mixing bowl, combine the almond flour, eggs, pumpkin puree, cinnamon, baking powder, ginger, allspice and stevia. Whisk thoroughly to combine.
  • Put some of the oil in your skillet and place a heaping spoonful of batter into the oil. You will have to work with this a bit to spread the batter. It won’t spread on it’s own. I used roughly a generous 1/3 cup for each pancake.
  • Cook on each side, flipping as needed to get nice browning on both sides.
  • Serve with a pat of butter and enjoy!

  • Net carbs per serving are about less than 2 grams.
