These healthy low-carb breakfast crepes are sweetened with just fresh strawberries. You can of course add a few drops of stevia or a little erythritol if you prefer.

What I love about keto dessert crepes is that the crepes can be made several days ahead. They can be filled with almost anything at a moments notice: whipped cream, sugar-free strawberry jam, sugar-free nutella, ricotta cheese, sour cream, plain yogurt.

Creamy Keto strawberry crepes are soft coconut flour crepes filled with luscious whipped cream are topped with sweet fresh strawberries. The perfect low-carb anytime dessert!

Ingredients

  • Crepes:
  • 6 Eggs

  • 1/2 Cup Almond Milk

  • 2 tbsp Coconut Flour

  • 1 tsp Erythritol

  • Filling:
  • 3/4 cup sliced strawberries

  • 1/2 cup heavy whipping cream

  • 1/2 tsp vanilla powder

  • 1 tsp vanilla extract


Directions

  • Add eggs, milk, sugar, flour and vanilla in a mixing bowl. Mix thoroughly.
  • Heat 1 tsp of coconut oil in a 9″ saucepan over medium heat.
  • Pour 2 tbsp of mixture into the pan and move the pan around until batter coats the bottom of the pan.
  • Cook over medium heat until you see the batter isn’t wet anymore.
  • Use a spatula and flip the crepe to brown the other side if desired.
  • Remove crepe from pan and repeat process until you run out of batter. Crepes will be like a very think pancake.
  • Fill the crepes with whipped cream (or coconut cream) and slices of strawberry.
  • Roll the low-carb crepes up and enjoy. Optionally, sprinkle with hemp seeds or crushed walnuts.
